Ingredients

3 cups cooked rice or quinoa

1 can black beans (rinsed)

1 cup corn

1 bell pepper, strips

1 avocado, salsa, cilantro, lime

½ tsp cumin, salt/pepper

Directions

1. Warm beans/corn with cumin.

2. Sauté peppers 3–4 min.

3. Assemble bowls: rice → beans/corn → peppers → avocado → salsa.

4. Lime + cilantro to finish.
