Ingredients
1½ lb baby potatoes, halved
1 lb asparagus, trimmed
4 cod fillets
3 tbsp olive oil
2 cloves garlic
lemon zest/juice
Salt/pepper
parsley
Directions
1. Heat oven 425°F/220°C. Toss potatoes with oil/garlic; roast 15 min.
2. Add asparagus + cod; brush with lemon-oil; salt/pepper.
3. Roast 10–12 min (cod flakes).
4. Lemon + parsley.
