Ingredients
4 salmon fillets
1 lb baby potatoes, halved
8 oz green beans, trimmed
1 cup cherry tomatoes
2 tbsp olive oil, salt/pepper
Lemon-Dijon: 1 tbsp Dijon + juice ½ lemon + 1 tbsp olive oil
Directions
1. Roast potatoes 425°F with 1 tbsp oil, salt/pepper for 12 min.
2. Add beans and tomatoes; drizzle 1 tbsp oil; roast 5 min.
3. Push veg aside; place salmon; salt/pepper; roast 8–10 min.
4. Drizzle Lemon-Dijon and serve.
