Ingredients
1 head cauliflower, florets
2 tbsp olive oil, 1 tsp chili powder, ½ tsp cumin, salt
8 small tortillas
Slaw: 2 cups cabbage
2 tbsp vegan mayo
juice 1 lime
pinch sugar
salt
Salsa verde, cilantro
Directions
1. Toss cauliflower with oil/spices; roast 450°F 18–20 min.
2. Mix slaw.3. Warm tortillas; fill with cauliflower, slaw, salsa.
