Turmeric-Ginger Carrot Soup

Ingredients

1 tbsp olive oil

1 onion (diced), 1 lb carrots (coins)

1 tsp grated ginger, ½ tsp turmeric, pinch pepper

4 cups veg broth, ½ cup coconut milk (opt)

Salt/lemons

Directions

1. Sauté onion in oil 3 min; add carrots, ginger, turmeric 1 min.

2. Add broth; simmer 18–20 min until tender.

3. Blend smooth; stir in coconut milk; season and lemon.
