Ingredients
1 tbsp olive oil + 1 tbsp butter
3 cloves garlic, minced
1 cup orzo
2½ cups low-sodium chicken or veg broth
½ cup cream (or half-and-half)
½ cup sun-dried tomatoes, chopped
2 cups baby spinach
½ cup grated Parmesan
Salt
Pepper
Squeeze of lemon
Directions
1. Sauté garlic in oil/butter 30 sec. Add orzo; toast 1 min.
2. Pour in broth; simmer, stirring, 10–12 min until al dente.
3. Stir in cream, tomatoes, spinach, Parmesan; season and lemon to finish.
