Ingredients

4 large tortillas or lavash

2 cups chopped romaine

1 cup cucumber, diced

1 cup edamame or chickpeas

1 avocado, diced

Dressing: ½ cup vegan yogurt, ½ cup herbs (basil/parsley), 1 tbsp lemon, 1 tsp capers, salt/pepper

Directions

1. Blend dressing smooth.

2. Toss greens, cucumber, beans, avocado with dressing.

3. Fill wraps; fold and slice.
